I have had my Rogers wireless 8310 for about a year now, and it recently got turned off because of bill disputes. (but that�s another story)
Am I able to purchase another sim card from Rogers and use it in the blackberry as a prepaid phone? I don�t care about the internet. I just want it for text and calling.
Also will they know that I have done this?

This can be done on AT&T so I would assume you can on Rogers without problem Text messaging and phone use should be fine.
