Full integration with Outlook. Mailing lists, birthdays, full HTML, bold, italics, underline when typing. The BackBerry is THE email machine but you can't type in bold face type, how silly.
More customisation options all over the OS. I know that this will increase the size of the OS so they had better start shipping phones with more memory too. Just stick a gig in and be done with it.
People have mentioned some of them. Since recently coming from WM its kinda hard to complain about my Sophieberry but let's see:
-color options for separating email accounts in message list.
-ability to sync calendar with desktop calendar & desktop email contacts
-ability to save applications to sd card.
-large photo incoming call options
-ability to get flash of incoming message on home screen without having to click in message list.
- microsoft office installed!
That's all I can think of right now, but I'm sure I'll revisit this topic.

Being able to see apoointments from more than one calander on the Today screen, so that if someone sends an appointment to an email address that is not my default calander I can see it on the list with switching defaults...
Is there a way to assign a ringtone to unknown calls?
I set a generic old phone ringtone to the phone and each person in my address book has their own ring tone. If I hear the old phone ringtone I know it's not someone I'd expect and so I mute it. If they know me they should leave a voice mail. To this day I have never had a unknown caller leave a voice mail.
I need the ability to copy/paste appointments in calendar. I can't believe there is no way to do this.
Browser: I'd like the zoom level to maintain when following links. Needing to re-zoom in on every page, just to find a link to the next page is a pain.
