Enterprise activate screws up phone
I upgraded to OS 7.1 a couple weeks back. The upgrade completely screwed up the phone, the screen was mostly black, the icons went tiny, most icons were invisible, and was getting all kinds of different errors from different applications trying to launch.
I tried re-installing OS, factory wiping, and downgrading back to 7, all of which fixed the phone issues, until I activate enterprise email.
After activation I get the same issues. But here's the kicker, I sent the phone in for repairs, and the same thing happened with the LOANER PHONE
So I figure it has to be something on our IT end, but my IT guy has no idea.

I've never heard of your situation, but from your description, it sounds like when you connect to the Enterprise, that the Enterprise is loading a theme that is incompatible with the OS you just installed. If you are using a third party theme, switch to the factory default theme and leave it on for at least one day. That should give the Enterprise time to copy it. Then attempt the OS upgrade and reactivation again.
