I haven't really used it but you can compose and send emails and do some other stuff. I don't recall if there are 3rd party apps that will also do more.

I use speech-to-text quite frequently, especially for texts and some emails . When your keyboard is up, you'll see a greyed out microphone in the same key block as the period key. Press and hold momentarily and the mike recorder will launch. You can also speak punctuation, like period, question mark, exclamation etc..
