When you go to the Hub and click on anyone of your email accounts, click on the blue bar that has the name of the email provider i.e. Gamil/Outlook/Live/AOL/Yahoo ( the color of the bar may vary depending on possibly your OS version) at the top of the screen. A drop down menu will open.

Inbox
Archive
Drafts
Junk
Trash
Outbox and Sent items.
I've never personally seen Spam listed.

I think you may need to log into the full account via the web to see a SPAM folder.

I've checked all my email accounts and I have no archive or trash or junk on any of them only 4: inbox, sent, draft and outbox and a message pops up saying outbox is not supported. Is this a carrier issue perhaps?

It varies by the email provider, my Gmail accounts have options my Live account doesn't have and vis/versa.
My Outlook account has Archive and options my yahoo account doesn't have.

If you click to read emails in a folder that you don't have sync'd it'll automatically sync it. This means that if you check your junk mail folder from the Hub instead of just logging in via the browser, your phone will start to pull all junk mail from the server unless you go in an manually choose not to sync. You'll also get notifications every time junk mail arrives. I suggest using the browser to check that folder and keeping only inbox, trash/deleted, and sent folders sync'd. It'll also help conserve battery.
