    If I keep my data on say when I'm in the road and don't use it my data won't go up right? But say something triggers it, it's gets used correct?

    Generally, yes. That's how it works.
    But in this day of smartphones there's data syncing for email, FB, Twitter, timezones, etc. You've set them to push or sync ever " " minutes so they do so. Don't forget about background data.

    Your best bet, turn off data when running on roaming. Turn off data.
