Sometimes if I type really quickly, or brush against 2 keys at once, odd random letters get typed. Usually they're like an umlaut or something. But sometimes its russian letters. I have NO idea how I'm doing this..

I got weird characters sometimes and it was driving me crazy ... I found that I was accidentally moving the trackball as I was typing which would give me the special characters..... I do it when typing the word "you" ALL the time, which changes the O.

You may be hitting alt-enter by mistake which by default is the Input Language Selection Shortcut.

To change this go to Options / Language and Text Input. Then scroll down "Input Language Selection Shortcut" and mark is as "None"
