Like on different phones, you can have the background display be black and the text white so its not so hard on the eyes? Is there a way to change the colors, or maybe a theme someplace that can do that?

The only way I can think of is through application of themes. I don't think there is a way to change the background natively. The only option is how you like your messages separated (by stripes or lines or none at all).
You can go into the advanced options menu from inside "options" and open "accessibility". There you can set a reverse contrast setting but its horrid imo. As jzach said if that doesn't suit you, maybe a theme could help.
