does anyone know how to remove all crap that AT&T put on the 9860?

They aren't installed, they're just links to download the stuff and those can't be removed.
Create a junk folder, move everything in their and hide it. Done.

Well, generally they can be removed, but they come right back when you reboot and re-load the service books.

As mentioned, moving them all to a folder and hiding the folder is the cleanest way to deal with this.
