I know the general rule of thumb is less icons on the desktop of a device is better for speed...and I know Crucial stated this fact for the Storm also...my question is, do I have to actually delete or move icons off the Home Screen to achieve this speed or can I simply hide it?

Simply hide them. If you set your grid display to 4x4 and have no more than 16 icons visible then the blue highlight will follow your finger.

Hiding and deleting are 2 different things. I simply hide most unused icons just in case I ever want them back.
