except allow more than 160 stinkin characters in a text. My other BBs would allow unlimited chats and just send them as multiple messages. Why won't my storm?!?

You don't get more characters to send. It just sends 160 and whatever is over it sends as another message. Now mms is multimedia message. But don't attach a picture just type

I wish it worked that way for me. It won't even let me go over 160 characters. Just pops up and says field full.

probably because you're using a VZW phone on AT&T. VZW imposes a 160 character limit.
If you force the phone into a different Network Technology from Network options and use GSM/UMTS you can parse multiple messages but sacrifice stability for using other network options.
