Simplest way of looking at it: a security wipe will reset the phone to the exact same software condition as the day it left the factory.

    The only exceptions are:
If you unlocked the SIM network lock, it will not relock to the original network.
If you did any OS upgrades or installed any leaked/beta OS, it will not revert.
If you have an SD card inserted with device specific encryption, the data on it will not be recoverable unless you remove the encryption, then remove it before the wipe.

All personal data (photos, music, contacts, etc) will be wiped. Applications that you personally installed after getting the phone will be wiped, but apps that came with the phone will return after the wipe.

Does anyone know how long the security swipe should be taking?

Mines been "hanging" for about three hours and it looks like its still swiping.

Does anyone have any suggestions? I can't switch it off or anything

If you had a considerable amount of data, then wait. If not, let the battery die or try a hard reset holding the power button for a good 10~ seconds or both volume keys for the same amount of time.

Maximum I've had mine take was 7 hours. That was a Q10 packed to the ceiling with music, photos and videos, though.

I've also had it fail if the SIM card is out of the phone - best to start it with a SIM IN the phone.
