System Settings, Accounts, select the email account, scroll to the bottom & change 'Sync Interval'. Unless you have Push enabled for the account. In which case, you set it to off.

Thanks - greatly appreciated. Worringly I have been looking for this for about a week! Set email accounts from every 15 minutes to an hour - will that make a big difference in battery life?

I have mine syncing every 24 hours. I still get mail instantly via Push though.

With email set to push (or with most IMAP accounts), the sync interval merely determines how quickly changes such as Read/Unread status and filing of messages to folders occurs.
