In Lollipop there was an Interruption Setting where you could tell the device not to sound certain alarms during some hours of the day/night.

That seems to be gone in MM? I see what maybe its replacement under Do Not Disturb but it seems a bit more complex to set up. Is that where you now have to Program "QUIET" times?

Yes, this is in DND. A few automatic rules are built in such as during confirmed calendar appointment, weekend or weeknight both of which are disabled by default. You can create your own automated time or event based rules if you wish.
For simpler basic daily usage, can manually turn on, enable for time which defaults to an hour, or leave on until next alarm similar to what bb10 night mode does.
You also have 3 profiles to choose from. Total silence, only alarms, or priority contacts/events
