All of my friends with androids can talk to text Facebook comments, text messages etc. How do I enable it on my Priv? I have the microphone icon but it is grayed out and I can't use it.

Try going to Settings -> Language and Input -> Voice Input. Select Enhanced Google Services then click the gear icon next to it and ensure its all setup with your required languages etc.

With the pkb out, try holding down the 0 key next to the space bar when in a text field.

I checked all my settings and everything is setup as you suggested. I didn't know if I needed to use Google keyboard or a different app to get it to work.

When the keyboard comes up long press the "," which has the microphone icon on i down at the bottom left of the space bar. pKB, hold the button zero then click the Mic that shows up on the bottom right of the screen. Either will bring it up for you then you can use speech to text.

Ok but my problem is that when I try either of those to get to the microphone, the microphone is grayed out and unselectable. Like in my above screenshot.

One more thing to try, language and Input make sure that 'Google Voice Typing' is listed as an input method. See my screenshot:
