I haven't yet upgraded (?) to the .3058 version (or the developer 2.1), and I don't want to. But I'm constantly reminded by a notification that the update is available for download and installation. Can I get rid of this notification?

Not that I am aware of. You can touch the notification area and close it, but, it will keep reminding you that it's available. To get rid of it, you can update.
If you registered for the 2.1 beta update, then just wait 48 hours for request time-out, otherwise you shouldn't get 2.1 update notification. If you're talking about the last official version, then just find a wifi and update... Don't see any reason for not doing so.
