I have a 6GB plan which I can easily stay under on monthly basis. I'm usually around WIFI at office and home so it isn't constantly searching which I assume consumes a considerable amount of battery. Having said that, would it save more battery by simply turning off the WIFI and using LTE?

If your LTE signal is poor and you have a lot of activity, using wifi can save a lot of battery. That said, I refuse to use wifi because I'm paying for a 6GB plan.

    I guess if 6GB is enough.... If I didn't have Wi-Fi I'd need a 12GB plan.

Pretty sure Wi-Fi is going to save you... IF you can turn off the LTE Radio (many in the US can't). If LTE is still on, not sure how much less power you would be using. As stated it would depend on signal strength.
