Go into options
advanced options
applications
highlight the one you want
click the menu button and click on delete.
Or you can do this through the desktop manager software.

Yes, that is the procedure. You can also do it through BlackBerry Desktop Manager.
Some "applications" are actually Service Books pushed by the carrier and can't be deleted. The best thing to do with those is to just hide the icon.
