I've found some nice (free) Today Plus themes including PMB-Blue Bold, iSunset, iBerry and Flamboyant for my 8300...

...but what I really want is a theme that enables the 6 apps at the bottom of the Today page to be user configurable.

Have you got any recommendations?

Most of them are customizable. When you are in the applications screen, simply put the programs you want at the top of the applications screen using the move function. For example, if you want your 6 applications to be browser, messages, alarm, viigo, ESPN etc.. then move those applications in that order to the very top of the applications screen. PM me if this doesn't make sense.

Often times the poster will state that icons are moveable.

Both iBerry and Flamboyant are user configurable, just move the icons around. .

I don't think i've used any theme where I couldn't move the icons.

There is such a theme. Go up top to search and type in 4.5 theme today plus no icon. And u will get two themes one with icons showing on the bottom and one without. And yes calender on screen and more then three entries.
