I'm trying to lengthen the time my wife's 8310 rings before it goes to voice mail, but for the life of me, I can't find that option in the menus. I also can't find the Blackberry Setup icon, which I'm pretty sure was there the other day - could the choice of number of rings be in there somewhere?

Any help would be very welcome!

Your service provider would have to do it, but when I tried, Verizon told me the industry standard is 15 seconds and will default to that.

Depending on the service provider but most dont go off "number of rings" it goes off seconds. Most carriers, at least AT&T and Verizon default to 20 sec because you are billed for 1min after 30sec of ringing. Thats why intl sometimes you'll see missed calls are 1min because of the time it takes in the switch.. dumb I know.
