I'm not sure if I can permanently set a given group of applications I want displayed when I call upon these feature. Is it possible?

No. Appswitcher shows open programs. FOr what you are looking for I recommend quicklaunch. Then you can set a list of the apps you want to have easy access to from any screen, not just open apps
