How do I configure the GPRS settings on a BlackBerry 8320?

Why would you have to configure it? It comes pre-configured. What exactly are you trying to do?

Well, because the phone is unlocked and I'm not using it on T-Mobile I cannot use gprs to access the internet.
I have only Wi-Fi browser available for selection.

You aren't going to be able to use GPRS/EDGE unless you have signed up for a data plan with your carrier. GPRS/EDGE is a data service provided by a carrier.

I am signed up to one, it's just not T-Mobile.
