BUT, I was just wondering what everyone's favorite things about their phone is. What makes you love your BlackBerry so much?
What are the differences between the different 83XX models?
(I'll be getting a 8310 with AT&T, but I'm just curious )

The ease of email and scheduling and synching with Outlook 2007, a stable efficient OS, the hardware keyboard and awesome form factor! Everything that makes a BB a CrackBerry!

The 8310 is has GPS and is for GSM carriers.
The 8320 has WiFi and is for GSM carriers.
The 8330 has GPS and is for CDMA carriers.

What I love about my phone...

SureType... I type pretty fast on it for texting and emailing.
BB Messenger... Awesome stuff.
Alarm... I would have been fired if it wasn't for this thing, it's loud and annoying.
Twitterberry... Allows me to post/view on twitter while on the go.

Anytime... The GPS is pretty solid. I didn't mind paying $10 for Telenav/Navigator.

You have other options and do not have to pay the monthly fee.

Nav4All... in which AG stated.
Gmaps... no turn by turn, but great app.
Co-Pilot... 6 month trial.

Qwerty keyboard, interchangeable options for everything, ease of syncing with MS Outlook, and of course the O.S. (which I have diligently kept up to date, as far as I can find, anyway).
