Not sure what I am doing wrong but I deleted most of my applications to free up space for the OS update and it is not working. I also removed photos and other media files to SD card as well.

Good idea moving your media from local storage to your SD card. How much space is left on your phone?

If all else fails, try backing up your BlackBerry through BlackBerry Link, wipe the BlackBerry, then apply all update fresh?

Yep insert a microSD if not already, but make sure all images, music, videos and most important make sure your apps are using this microSD for there data as well.
In case you are using WA!
Make sure this dreadful app stores it's daily backup files on to the SD too not as default to the device!
And do your self a favour and delete all the WA backup files but not the last recent one.

After that try the update again.
