There is no issues with trying the new OS's unless something goes completely wrong during install, but normally doesn't happen.
I feel if an OS is working for you and you are not seeing any problems and having all the functionality that you want, then there isn't much of a reason to change an OS. I enjoy trying new OS's, just to see if anything new is available, but if nothing catches my eye or it doesn't seem better than the previous, I revert back to the build that has been serving me well so far.
7.1.267 and .342 are both good, much better than the one you are on. I would not go back to 7.0 because of the lack of wifi hotspot, that feature has got me out of a couple of jams.

I have tried all os 7.1, gone back to 7.1.0.205. Solid, reliable, fast, good on 3g and wifi reception and great on battery life!
I always go with the most recent officially released OS unless there is a reason not to. I started with 7.0.0.585, wiped the phone and upgraded to 7.1.0.267 from Bell, then upgraded to 7.1.0.284 from t-mobile, then to 7.1.0.340 from cellcom wireless israel. Other than the terrible battery life on OS 7.0, I have not noticed any significant difference in stability, performance or battery life between the OS 7.1 releases, so for me, there is no reason not to keep using .342 until something newer gets officially released. Why not just try them all and see if there is one that you prefer?
If you have AT&T .267 is what youre going to want. Free wifi hotspot FTW, you just have to do a simple work around to make your display brightness stick.
I was using .267 for about 4 weeks and I really did not like it. Of course it had a lot of new features but the battery life just wasn't there. At the office I work at I do not get great service so my battery is expected to drain rather quickly. Using .267 I noticed that when I took my phone off charge at 7:30am my battery would be at 20% by 3:30pm. I have since downgraded to 7.0.0.374 and the battery life is great! I can take my phone off the charger at 7:30am and when I leave work at 5:30pm the battery is around 55%. During work I only check my phone for the 1-5 texts that come in and a few BBM messages. I'm sticking with .374
