Are you sure you are pressing numbers on the numeric keypad?
From my understanding when you press a number key it will show that number and continue that way on the display as long as you are pressing number keys, searching your contacts by number, until you finish dialing. If the number you dialed is in your contacts, it will then convert it and show that contact you are dialing by name on your call screen after you confirm the call by pressing the green call button.
When you begin to dial with any other key other than a number key it will show that letter and continue that way with letters (even with subsequent numeric key presses), searching your contacts by name, until you finish dialing. If the name or something similar you dialed is in your contacts, it will narrow the choices down from what you typed. You can pick a contact from the list produced, then it will show that contact you are dialing on your call screen after you confirm the call by pressing the green call button.
If you start by pressing numeric keys and then press a letter key during the process it will change everything you typed to letter form as then it starts to search your contacts for a match.
Bottom line, if you want numbers to show, you need to press only numbers.
If you press any other keys it will change on the display to letters. Even with subsequent numeric key presses.
As previously mentioned if you want to convert a number to something like 1-800-FLOWERS you need to press the ALT key while dialing. Please read your user manual...

I think the OP realizes that, and it is from there we were giving the instructions to work from.
As far as I know, There are only 3 ways to make a call starting from the homescreen:
1) Application Shortcuts-In which you can press "C" for Contacts, or "A" for Address Book. Either way you will see the same behavior I just described as it searches by name (letter) only, unless the user has an application mapped to that letter. In that case it will open the mapped application instead.
2) Universal Search-In which you can press any combination of keys and they still show as letters in the search area, but just beneath that they will show the number being dialed. You can then hit the green call button after to connect the call. The OP stated that he wants to be able to see the number being dialed as a confirmation that he is typing the correct number. So obviously he is not using this.
Please see the user's manual here...

3) Phone Application-In which you press the green call button first to get into the call screen. Which my previous post described the behavior that will be seen when starting to type. Also, as stated...
So it will only continue to show numbers depending on what key is pressed. It may NOT always be numbers only, as a member stated. If you start by pressing numeric keys and then press a letter key during the process it will change everything you typed to letter form as then it starts to search your contacts for a match.
Pressing the green call button is the most standard way of initiating a phone call on a 9780.

If I am incorrect, can someone please let me know. Thanks!
