It will work for sure. You should get all features and full 3G performance on (roaming) cellular, and if you find an accessible WiFi signal you will also get your RIM data.
Assuming you are visiting, not relocating permanently... If you unlock and use a NZ SIM you will probably find cellular service is restricted to phone and SMS, unless you are able to find a network which offers prepaid access to BlackBerry and will setup a short term BIS account (not many will do this).
