I cannot find a cow theme for the Bold? Anyone seen one... preferably the Holstein (black and white) cows like on Chick-Fil-A ?

It's a start: is this your first theme? I would like to see the network, time/date, battery, and signal strength on the home screen. the icon seem to fit the style of the Bold so I would suggest you continue that style.
