You would install it the same as on a normal server.... it's pretty much exactly the same but .... virtual

Dito.... I just did that last week... literally. Fire up your server VM, remote desktop in and follow thee video from RIM. Couldn't have been easier. We are testing in the testing phase right now. The only problem I'm having is Send As permissions on our Admin level users in IT, myself included. RIM recommends rebooting our Exchange Server.... We aren't ready to do that just yet.

A reboot wont do anything....
To enable Domain administrators Send As besadmin permissions you need ,to amend and run this command to fit your AD structure;

dsacls "cn=adminsdholder,cn=system,dc=YOURDOMAIN,dc=n et" /G "YOURDOMAIN\BESAdmin:CA;Send As"

Use the attachment. as it won't copy and paste properly.

Yeah I did that and it took longer than normal to sync the permissions with Exchange. I am now able to send from my Blackberry. Testing has been going well and we expect to roll out BESX officially this week to the rest of our BB users.

I had that problem for a while and finally stumbled upon that command line.
