8820 randomly changes To/From when sending email.

I'm IT support and have recently been given the task of troubleshooting blackberries. Our network is using using Server 2003/Exchange. I have limited experience with them which is why I'm here. I have a user who selects a recipiant when using Outlook 2007, then the blackberry randomly puts a completely differant person's name in the "To" field. The subject line and everything else is fine. This happens when certain people send him email as well. It only is happening on his blackberry. I've had him do a battery pull but that didn't help. My first ehlp ticket for a blackberry and this one has me scratching my head. Thanks in advance for any assistance.
