If I upgrade OS version, will that unlock as well? If not, does anyone know what's the best way for me to get my 8700g unlocked from Suncom?

Upgrading the OS will not unlock the device. If you are not a Suncom customer then you will likely need to have it unlocked by a 3rd party unlocking service. I recommend:
