Say if someone picks up my phone and wants to look at my phonbook, pictures, ect. How do I protect that stuff with a password??

What daddy bear said that will set a password for your entire phone. If you have a an sd card you can store your pics there and password protect the card instead of the entire phone. Go to options>advanced options>media card>encription mode.
