Is there a way to change default menu item that is selected?
When pressing the menu key, the Maximize Panel is highlighted. Is there a way to change this? for example, can I have Add Folder highlighted by default instead?

No... you can't. But if you double tap it, it will maximize your icon panel. Double tap again and it will minimize.
Just hit your menu button and then the "a" key. It will drop down. You will get used to it.
