When I send emails from my exchange account it puts the sent emails on my hub. This also happens when I reply to an email either on my Classic or on my desktop.

Check your Folder Sync settings in your System Preferences, you should see a 2nd Sent folder lower down the list that you may have check on (uncheck)

System Settings* - on your 1st or 2nd screen.
System Settings | Accounts | Mail Account | {scroll down to - Edit Folder Settings} | You may have 2 sent folders (the 2nd one should be unchecked
If you only have 1 then you can try that, but normally you want to see your emails sent.
The 2nd is the usual culprit for my friends.

Well I found it but it is greyed out I am not allowed uncheck the sent folder. When I turn on the Sync all folders it greys them all out and checks them all and I can not change them.

You can't change them when you have turned on "sync all folders". So why not turn off "sync all folders" and then individually select which folders you want to sync?

If you want to stop all sent items from appearing in the Hub, then easiest method is to select the overflow menu (3 dots), then select Display and Actions. Then scroll down and turn off the switch for "show sent items in hub".

The other option is to simply hide the sent messages from the Hub, but keep them available on your device. Go to Hub, Settings, Display and Actions. Scroll down and toggle off "Show sent emails".
