Ever since I've updated to 10.3.1 my sons phone number comes up instead of his name. I've tried adding it to his contact info and even deleted it and started from new. Every time he calls or texts me his number comes up. His number format as displayed +1 (xxx) xxx-xxxx . Any ideas as to whats going on? It's the only number that does that, my wifes, my other son and even all my friends work just fine.

That's unusual. Maybe a hard reboot could fix it. If you're not familiar with a hard reboot, press the up and down volume buttons simultaneously until you see the square start-up screen, then release the button.

I had this problem, but it happened with multiple contacts and very often. It got better after I switched from regular gmail contacts sync to carddav. Still have the problem sometimes though...
