Can't seem to figure out how to disable the LED and instant previews for emails.

They're disabled in the notification settings and there's no place to set app level notifications for email.

As an aside, I see BlackBerry never got around to adding the SMS icon to "text messages" in app level notifications.

What OS version are you running and what is your BlackBerry's make and model number?

When you tap on "Customize App Notifications", you should be able to select Email, where you can customize by account.

I saw that. I should have replied more clearly, that he's in the correct area but the option that should be there isn't. (Don't know why. Firing up an old device to check.)

Is the email account setup in the Hub?
If so, for how long has the email account been set up and running on the Z30 and what type of email account (Enterprise, POP, IMAP, etc..)

It's looking like, from your second screen shot, that the device has just recently been setup. If so, it sometimes take a bit of use before the Email account shows up in the Settings/Notifications.

I use an app called Hub++ to tweak my LED settings for notifications.
One of it's side effects is speeds up and simplifies adding new "accounts and apps" to Notification settings. It's not freeware, however.

OK, what type of email account?
    (POP, Enterprise, IMAP, Exchange, etc...)
Also, is the email via an app on the device or is it integrated in Hub/Settings/Email Accounts?

It's an outlook.com exchange account in the hub.

OK, this is weird.... Email should be there and Text messages have had an icon for awhile.
I do not suppose they are showing up under the Normal profile Customize App Notifications?

Here is a screen shot from mine:

Nope, don't have it anywhere. Strange.
I'm sure I've adjusted the email settings before. Never had the text message icon either.

Removed and re-added the account and the issue cleared up.

SMS icon still missing. Also gone from my Z10. And boy, I forgot how nice the light theme is on various setting pages on the Z10.
