When long pressing an App/Folder icon, you of course get the Delete app/folder icon.

Instead of the Delete icon, how about an Options icon which opens a screen allowing you to do multiple tasks. As seen in my mock-up below, you can Rename(where appropriate), Move or Delete an app/folder from a single screen.

When managing many pages of apps, dragging them from one screen to the next can be a long and tedious task. So in addition to dragging, I suggest having an option to simply select which folder/page you'd like to move an app/folder to. Easy peasy.

Of course, the option screen could be expanded to contain other options such as hiding or password protecting apps and folders.
