How to sync email accounts forever

That depends on what type of email you're using -- it makes a difference.

An EAS (Exchange Active Sync) account such as Outlook.com, Hotmail, or Live.com can have the sync time frame changed by going to Settings > (account) > Advanced, and scroll to the bottom to adjust "Sync Time Frame".

IMAP accounts (such as Gmail) cannot be adjusted once set up. To change these, you have to delete the account and re-add it. When you reach the point where you have the toggles to turn on/off contact and calendar sync, tap advanced at the bottom of the page. Scroll to the bottom of the page. Initial Retrieval Amount can be changed to forever. That's the option you're looking for.
