    The "Youtube app" you are talking about is just a homescreen link to the mobile Youtube webpage. In order to fix this, visit youtube.com in your browser, open the side menu for the browser, and hit "add to homescreen". Rename the shortcut to whatever you desire, and voila! you have the "Youtube app" that Blackberry so generously provided from the beginning.
