Since i'm noob, I had no idea what NFC do. I did google it, but its complicated to me to understand. The point is, is it necessary to switch on the NFC?

Really depends if you have a use for it. I have my banking app tied into my visa so NFC allows me to tap and pay (where available ), I also use it through my Tim Hortons app it again allows me to tap and pay for my morning coffee. If you're not using it for anything...by all means turn it off
What BB10 banking app allows NFC tap-to-pay? Just curious as I couldn't find any Canadian bank apps that did.

I have used my Q10 at tims. Just hooked up a tims card to their BlackBerry app on my device, turned on nfc and held it ontop of the card reader at tims and it accepted payment. I also have an nfc sim from telus that will work for payments elsewhere as well. They will try and charge you for the nfc sim but you can get it free if you call customer service instead of going directly to the providers brick and mortar

It can also be used for other simple things.
Ie. Tap with another nfc phone and...
1) auto add contacts from bbm with tap
2) share pics/videos/files with tap.
No pairing required as you would need with bluetooth although bluetooth or Wifi direct has a much faster transfer rate.
