is there away to only have certain folders in gmail show up in my hub? thanks

You should be able to select the folders you want showing up in the Hub.
From the Hub, go to settings (three dots on the right)
Tap on Email Accounts then tap on the email account you want to modify
Tap on Edit Accounts (on the action bar) and scroll down to the bottom.
Tap on Edit Folder Settings and select/deselect the folder you don't want synced then save.

I'm not sure this is exactly what you are looking for but I don't know of any way to set per folder notification or Hub setting.
