When lunching in Venice:

Never eat in a tourist restaurant - they try and get you in and out of the door for lunch in 10 minutes
Always chew many times to ensure proper digestion
Don't rush your wine...takes time to savor
Wait between courses - it's the civilized thing to do and allows for longer conversation!
It may take a few hours....but a good lunch is worth spending time on (and waiting for)....
