In the remember app you can leave a "voice Note" that will be translated to text as you speak and you can simply save it for later.
With that in mind any app that you can access the mike in will type what you say as you say it and you can make a folder for it and save it anywhere you want.
There are also independent apps that you can download from Play Store or Amazon that will do exactly what your looking for. Just do a "google" to start with.
