Question Switchig Email on iClouds/iTunes

My wife has an iPad 2. My Gmail is associated with the iTunes and iCloud accounts.
Had to use my Gmail to set it up to surprise her for Christmas

I'm getting an iPhone 4s

Can I change the Gmail (mine) associated with iTunes and iCloud on my wife's iPad 2 to her own Gmail?

This way I'll be able to set up my iPhone 4s with iTunes and iCloud accounts using my Gmail.

I believe I've read somewhere that I may have to delete my Gmail in her iCloud and iTunes account to add her Gmail, but the deleted email address could never be used again in iCloud or may even iTunes. Is this right?

Any suggestions on how to proceed would be appreciated.

Yes.

Go into settings then store and sign out of your account then build a new one. Same applies for iCloud.
