The single reason I jailbroke my iPhone was for a program called LockInfo. It allows me to see all of my e-mails (and texts, favorites, weather, tweets, and a bunch of other things if I want to) on the lockscreen, without the need to unlock it. It's sort of like Notifications, but a thousand times better. I'm seriously contemplating staying with iOS as long as LockInfo's development continues.
There's also apps that allow you to use the Messages app from anywhere on the phone (rather than being forced into the Messages app you want to reply) called BiteSMS (or Messages+), have unlimited apps in folders, have unlimited apps in the bottom row of apps (and you slide to view more), and many, many more. Like the app store, some are free and some are paid apps.
The process is ridiculously easy to do. It's also easy to remove, though you have to wipe your phone and start from scratch (or restore from a backup).
It does, however, "void" your warranty, so if you ever have to take your phone in for work, you'd have to wipe it, get the work done, then re-jailbreak when you get home.
