well considering i have jailbroke/rejailbroke ummm 3x litterally im gonna say yes.
Just be careful if it gets backed up while its jailbroken, one time i restored from a backup from before i jailbroke....and icons were missing when i did the restore....so i had to set it up as a new iPhone.....now in that case everything would be wiped.
If I decide to jailbreak, and somehow I need to use my warranty, can I just restore the original settings without Apple or AT&T catching that the phone had once been jailbroken?

From what I remember you can do this and they will never know.

A simple restore will reverse the jailbreak. A unlock on the other hand is a different story. You would be safe.
