I don't have a top 5. I use so many it's hard to say which are my favorites. But...

Gmail
Voice Search
Dolphin Browser HD
Jarvis
Car Mode
App Organizer
Beautiful Widgets Light
Business Calendar Free
Gauge Battery
iHeartRadio
Handcent SMS
Navigation
Talking Caller ID
WeatherBug
YouMail

Might be a lot but I pretty much use these everyday.

I'm using the IceCream Sandwich keyboard (word completion and spell check on AGRESSIVE)...but I'm not sure that's an app...whatever...I look at my FREQUANTLY USED APPS in my app drawer and delete alot...I like a lean machine...YouVersion Bible, Alarm Clock Plus, Fancy Widgets (the free one...save your pennies) I have 3 different "paint/sketch/artsy" apps for when the mood hits to draw, I use the stock browser and HTC music app(good enough) and Color Notes...I use the Go Launcher and a bunch of Go widgets for that ICS look and feel

P.S...FriendCaster too

I am tempted to give Friendcaster a try... FB official is horrible.

Where did you get the ICS keyboard? XDA?

AppGarden- great do-it-all utility for simple daily tasks. Free and paid version. Small footprint.
Friendcaster- better alternative FB app...IMO
PocketCasts- podcast listening app. Also us PodTrapper as an alternative but more expensive but also more customization.
Relax and Sleep- different sounds for falling asleep. Can mix multiple sounds. Free
Screen off and Lock- locks the screen by touching in notification bar or anywhere on the screen of your choosing. Free
Wordsmith- scrabble app alternative to WwF. Free. Hit me up for a game: ThaRam

Many more but that's my short list.

Yes, depending on device. Some have it built in now.
